Tomofumi Uchimura, 40, of Japanese origin, who arrived in France in 2007 started working in Megeves alongside Chef Emmanuel Renault in the three-star restaurant "Le Flocon de Sel" until 2010. He will continue for 9 years professional adventure at "Lameloise" in Chagny with the chef, best worker in France, Eric Pras where he will finish as assistant chef.
The takeover of this establishment is the story of a meeting between two great chefs with Stephane Derbord and a handover, of a transition with the same vision of cuisine: authentic and generous !
Origin, it is also a story of a couple. Seiko, Tomofumi's wife who is in charge of the room, will stage her husband's creations every day. The culinary universe of chef Tomofumi Uchimura is a clever blend of culinary techniques and flavors of the land and waters of our beautiful region in a bright and contemporary setting. Chef Tomofumi invites his guests on a bucolic walk from nature to plate, focusing on local producers and short circuits. Throughout the seasons, the chef will give pride of place to vegetables, plants, flowers and mushrooms from our magnificent Burgundy terroir. Every day, for lunch, a surprise menu, inspired by the freshness of the products and the chef's mood, will be offered.
